Instead of serving the corn on the cob, this version is tossed into a spoonable salad with charred corn kernels, tangy mayonnaise, salty cotija cheese, fresh lime juice, and warm spices. Instructions

Cook and Char the Corn
If using fresh corn, grill or pan-roast the kernels over medium-high heat until lightly charred and golden. This step adds a smoky, authentic street-corn flavor. If using frozen corn, thaw and pat dry before roasting. -
Prepare the Dressing
In a large bowl, whisk together the mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper until smooth and creamy. -
Combine the Salad
Add the warm corn to the bowl and toss gently to coat it evenly in the dressing. The warmth of the corn helps the flavors meld together beautifully. -
Add the Cheese
Fold in the crumbled cotija cheese, reserving a small amount for garnish if desired.
