Ingredients

(Serves 4–6)

  • 1 lb ground beef

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 cups corn kernels (fresh, frozen, or canned, drained)

  • 1 packet ranch seasoning mix (about 1 oz)

  • ½ cup beef broth

  • ½ cup heavy cream or milk

  • 1 ½ cups shredded cheddar cheese

  • 1 tablespoon olive oil (if needed)

  • Salt and black pepper, to taste

Optional Add-Ins:

  • ½ teaspoon smoked paprika

  • ¼ teaspoon red pepper flakes

  • ½ cup diced bell peppers

  • ¼ cup sour cream for extra creaminess

Instructions

  1. Brown the Beef
Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.

  2. Sauté the Aromatics
Add diced onion to the skillet and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.

  3. Add the Corn
Stir in the corn kernels and cook for 2–3 minutes, allowing them to warm through and slightly caramelize.

  4. Create the Creamy Ranch Sauce
Sprinkle the ranch seasoning over the beef mixture. Pour in the beef broth and heavy cream, stirring well to combine. Simmer for 4–5 minutes until slightly thickened.
