⭐ Ingredients
Blueberry Reduction
-
1 cup fresh blueberries (or frozen, no need to thaw)
-
2 tablespoons granulated sugar
-
1 tablespoon lemon juice (optional but recommended for brightness)
Frosting
-
8 oz cream cheese, softened
-
1/2 cup unsalted butter, softened
-
3–4 cups powdered sugar (adjust for consistency)
-
1 teaspoon vanilla extract
-
Pinch of salt
🫐 Instructions
1. Make the Blueberry Reduction
-
In a small saucepan, combine blueberries, granulated sugar, and lemon juice.
-
Heat over medium, stirring occasionally, until berries burst and mixture thickens—about 8–10 minutes.
-
Mash the berries slightly and continue to cook until the mixture resembles loose jam.
-
Strain through a fine mesh sieve if you want a smooth frosting, pressing out all the juices.
-
You can skip straining if you prefer specks of blueberry skin.
-
-
Allow the reduction to cool completely.
2. Prepare the Frosting
-
In a mixing bowl, beat softened cream cheese and butter together until smooth, about 2–3 minutes.
-
Add vanilla extract and a pinch of salt.
-
Gradually add powdered sugar, 1 cup at a time, beating until smooth and fluffy.
-
Pour in the cooled blueberry reduction (start with 2–3 tablespoons) and beat until fully incorporated.
-
Adjust consistency:
-
Add more reduction for stronger flavor/color
-
Add more powdered sugar if frosting becomes too thin
-
Chill briefly if it seems too soft to pipe
-
🎂 Tips for Perfect Results
-
Use very soft cream cheese and butter for a creamy texture.
-
Make sure the blueberry reduction is completely cooled or it will melt the frosting.
-
If frosting becomes too loose, refrigerate for 10–15 minutes before spreading or piping.
-
For a deeper purple color, add a teaspoon of reduction at a time until desired shade is reached.
📦 Storage
-
Store in an airtight container in the refrigerator for up to 5 days.
-
Let it come to room temperature and re-whip before using.
-
Freeze for up to 1 month; thaw in the fridge overnight.
