For Serving:

🍳 Instructions
1️⃣ Marinate the Chicken
-
In a medium bowl, combine chicken strips with teriyaki sauce, minced garlic, honey, and ginger if using.
-
Mix well to coat all the chicken evenly.
-
Let it marinate for at least 15–20 minutes (or up to 2 hours in the fridge for maximum flavor).
2️⃣ Prepare the Grilled Pineapple Pear Salsa
-
Preheat a grill pan or outdoor grill over medium heat.
-
Grill pineapple cubes for 2–3 minutes per side until slightly caramelized. This brings out natural sweetness and adds a smoky flavor.
-
In a bowl, combine the grilled pineapple, diced pear, red bell pepper, red onion, lime juice, cilantro, and a pinch of salt.
-
Mix gently and refrigerate until ready to serve.
3️⃣ Cook the Teriyaki Chicken
-
Heat 1 tablespoon of oil in a skillet over medium-high heat.
-
Add marinated chicken strips and cook for 4–5 minutes per side, or until the chicken is cooked through and slightly caramelized.
-
Spoon in extra marinade during the last minute for a glossy, flavorful finish.
4️⃣ Warm the Tortillas
-
Warm tortillas in a dry skillet over medium heat for 30–60 seconds per side, or wrap them in foil and heat in the oven at 350°F (175°C) for 5–7 minutes.
-
Keep them covered with a kitchen towel to stay soft and pliable.
