Ingredients (Serves 4)

For the Cauliflower Bites:

  • 1 large head cauliflower, cut into large florets

  • 1/2 cup aquafaba (liquid from a can of chickpeas)

  • 1 tablespoon cornstarch

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika (optional)

  • 1/4 teaspoon black pepper

  • Salt, to taste

For the Buffalo Sauce:

  • 3/4 cup hot sauce (Frank’s RedHot or favorite brand)

  • 2 tablespoons vegan butter, melted

  • 1 teaspoon maple syrup (optional, to balance heat)

  • 1/2 teaspoon smoked paprika (optional)

Optional for Serving:

  • Vegan ranch or blue cheese dressing

  • Celery sticks and carrot sticks

  • Chopped fresh parsley or green onions for garnish

Directions

Step 1: Prep the Cauliflower

  1. Preheat the oven to 425°F (220°C).

  2. Line a baking sheet with parchment paper or lightly grease it.

  3. Cut the cauliflower into bite-sized florets and pat dry to remove excess moisture.

Step 2: Make the Batter

  1. In a small bowl, whisk together aquafaba and cornstarch until smooth.

  2. Season with garlic powder, smoked paprika, black pepper, and a pinch of salt.

Step 3: Coat the Cauliflower

  1. Dip each cauliflower floret into the aquafaba mixture, then roll in breadcrumbs until evenly coated.

  2. Place coated florets on the prepared baking sheet, spacing them out for maximum crispiness.

Step 4: Bake

  1. Bake in the preheated oven for 20–25 minutes, flipping halfway through, until golden and crispy.
