2 lbs potatoes (russet works best)
-
6 oz cheddar cheese, grated
-
4 slices thick-cut bacon, cooked and crumbled
-
1 tablespoon all-purpose flour
-
1 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
Salt and pepper, to taste
-
1–2 tablespoons olive oil or neutral oil for frying
Optional for Serving:
-
Ketchup or spicy aioli
-
Ranch or sour cream
-
Chopped green onions for garnish
Directions
Step 1: Prep the Potatoes
-
Peel the potatoes and boil in salted water for 10–12 minutes until just tender. Avoid overcooking—they should hold their shape.
-
Drain and let cool completely, or refrigerate for at least 1 hour for best results.
-
Once cooled, grate the potatoes using a box grater or food processor.
Step 2: Cook the Bacon
-
In a skillet, cook the bacon slices until crispy.
-
Remove and place on paper towels to drain.
-
Crumble the bacon into small pieces.
Step 3: Mix the Tater Tot Filling
-
In a large bowl, combine grated potatoes, crumbled bacon, grated cheddar, flour, garlic powder, onion powder, salt, and pepper.
-
Mix thoroughly until all ingredients are evenly distributed.
Step 4: Shape the Tots
-
Take a small handful of the potato mixture and shape into small cylinders or bite-sized nuggets.
-
Place on a parchment-lined tray as you work.
