Ingredients (Serves 4–6)

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon Italian seasoning

  • 2 tablespoons olive oil

For the Pasta:

  • 12 oz pasta (penne, fettuccine, or rigatoni)

  • Salt (for boiling water)

For the Creamy Sauce:

  • 3 tablespoons butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 3/4 cup grated Parmesan cheese

  • 1/2 cup sun-dried tomatoes (oil-packed), chopped

  • 1 teaspoon red pepper flakes (optional)

  • 1 teaspoon dried basil or Italian seasoning

For Garnish:

  • Fresh basil or parsley, chopped

  • Extra Parmesan cheese


Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook pasta according to package directions until al dente.

  3. Reserve 1/2 cup of pasta water, then drain and set aside.


Step 2: Season & Sear the Chicken

  1. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, paprika, and Italian seasoning.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Sear chicken for 5–6 minutes per side, until golden and cooked through (internal temp 165°F / 74°C).

  4. Remove chicken from skillet and set aside.


Step 3: Make the Creamy Sauce

  1. In the same skillet, reduce heat to medium and add butter.

  2. Stir in garlic and sauté for 30 seconds until fragrant.

  3. Pour in chicken broth, scraping up browned bits from the pan.

  4. Add heavy cream, sun-dried tomatoes, red pepper flakes, and dried basil.

  5. Simmer for 3–4 minutes until slightly thickened.

  6. Stir in Parmesan cheese until smooth and creamy.
