For the Grilled Pineapple Pear Salsa:

  • 1 cup fresh pineapple, cut into small cubes

  • 1 ripe pear, diced

  • 1 small red bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • 1 tbsp lime juice

  • 2 tbsp fresh cilantro, chopped

  • Pinch of salt

For Serving:

  • 8 small flour or corn tortillas

  • Optional: sliced avocado, shredded lettuce, lime wedges, or extra teriyaki sauce

🍳 Instructions

1️⃣ Marinate the Chicken

  1. In a medium bowl, combine chicken strips with teriyaki sauce, minced garlic, honey, and ginger if using.

  2. Mix well to coat all the chicken evenly.

  3. Let it marinate for at least 15–20 minutes (or up to 2 hours in the fridge for maximum flavor).

2️⃣ Prepare the Grilled Pineapple Pear Salsa

  1. Preheat a grill pan or outdoor grill over medium heat.

  2. Grill pineapple cubes for 2–3 minutes per side until slightly caramelized. This brings out natural sweetness and adds a smoky flavor.

  3. In a bowl, combine the grilled pineapple, diced pear, red bell pepper, red onion, lime juice, cilantro, and a pinch of salt.

  4. Mix gently and refrigerate until ready to serve.

3️⃣ Cook the Teriyaki Chicken

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat.

  2. Add marinated chicken strips and cook for 4–5 minutes per side, or until the chicken is cooked through and slightly caramelized.

  3. Spoon in extra marinade during the last minute for a glossy, flavorful finish.

4️⃣ Warm the Tortillas

  1. Warm tortillas in a dry skillet over medium heat for 30–60 seconds per side, or wrap them in foil and heat in the oven at 350°F (175°C) for 5–7 minutes.

  2. Keep them covered with a kitchen towel to stay soft and pliable.
