Zucchini Lasagna Roll-Ups
Ingredients:
4 medium zucchinis
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
2 cups marinara sauce (store-bought or homemade)
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh basil, for garnish (optional)
Instructions:
Prepare the Zucchini:
Preheat your oven to 375°F (190°C).
Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick). You can use a mandoline for even slices.
Sprinkle the zucchini strips with salt and let them sit for about 10-15 minutes to draw out excess moisture. Pat them dry with a paper towel afterward.
Make the Filling:
In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until well combined.
Assemble the Roll-Ups:
Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
Take a zucchini strip and place about 2 tablespoons of the cheese mixture at one end. Roll the zucchini around the filling tightly and place it seam-side down in the baking dish. Repeat with the remaining zucchini strips and filling.
Add Sauce and Cheese:
Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese on top of the sauce.
Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
Serve:
Let the roll-ups cool for a few minutes before serving. Garnish with fresh basil if desired.
