Zucchini Garlic Bites!

Ingredients
2 cups grated zucchini (about 2 medium zucchinis)
1 large egg
½ cup shredded cheddar cheese (or mozzarella)
½ cup breadcrumbs (Panko or regular)
2 garlic cloves, minced
¼ cup grated Parmesan cheese
¼ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Zucchini
Grate the zucchini using a box grater.
Place the grated zucchini in a clean kitchen towel or paper towel and squeeze out as much moisture as possible. This step is important to prevent soggy bites.
Step 3: Make the Mixture
In a large bowl, combine the grated zucchini, egg, cheddar cheese, breadcrumbs, garlic, Parmesan, oregano, salt, and pepper.
Stir until all ingredients are well mixed and form a sticky, slightly wet mixture.
Step 4: Form the Bites
Scoop about 1 tablespoon of the mixture and shape it into small balls or patties.
Place them on the prepared baking sheet.
Step 5: Bake
Bake in the preheated oven for 15-18 minutes, or until the bites are golden brown and crispy on the outside.
For extra crispiness, you can flip them halfway through baking.
Step 6: Serve
Garnish with fresh parsley if desired, and serve warm.
