Zucchini Garlic Bites
Ingredients:
2 medium zucchinis, grated
1/4 cup breadcrumbs (or panko for extra crunch)
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional for a bit of heat)
1 tbsp fresh parsley, chopped
Olive oil (for greasing the pan)
Marinara sauce (for dipping)
Directions:
Prepare the Zucchini:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
Grate the zucchinis using a box grater, then place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible to prevent soggy bites.
Mix the Ingredients:
In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly combined.
Shape the Bites:
Take about 1 tablespoon of the mixture and shape it into small, bite-sized balls or patties. Place each one on the prepared baking sheet, ensuring they are evenly spaced.
Bake the Bites:
Bake the zucchini garlic bites for 18-20 minutes, or until they turn golden brown and crispy on the outside. Flip them halfway through the baking time to ensure even browning.
Serve and Enjoy:
Once the bites are done, remove them from the oven and allow them to cool slightly. Serve with a side of marinara sauce for dipping.
