Zucchini Bread
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup vegetable oil
1/4 cup plain Greek yogurt or sour cream
1 teaspoon vanilla extract
2 cups grated zucchini (about 2 medium zucchinis)
1/2 cup chopped walnuts or pecans (optional)
1/2 cup raisins or chocolate chips (optional)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Grease and flour a 9×5-inch loaf pan.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Mix Wet Ingredients:
In a large bowl, beat the eggs with both sugars until well combined.
Add the vegetable oil, Greek yogurt (or sour cream), and vanilla extract, and mix until smooth.
Combine Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the grated zucchini, and if using, add the chopped nuts and raisins or chocolate chips.
Bake:
Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the zucchini bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
