White Queso Recipe
Ingredients:
1 tablespoon butter
1 small white onion, finely chopped
1-2 jalapeños, seeds removed and diced (optional, for a bit of heat)
2 cloves garlic, minced
1 cup whole milk
1/2 cup heavy cream
8 ounces white American cheese, shredded or cubed
4 ounces Monterey Jack cheese, shredded
1/4 teaspoon cumin
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper
1/4 cup diced tomatoes (optional, for garnish)
Chopped fresh cilantro (optional, for garnish)
Instructions:
Cook the aromatics:
In a medium saucepan, melt the butter over medium heat. Add the onion and jalapeños (if using), and sauté for about 3-4 minutes, or until the onion is soft and translucent. Stir in the garlic and cook for an additional 30 seconds.
Add milk and cream:
Pour in the whole milk and heavy cream, stirring well. Heat the mixture until it’s just about to simmer (but do not let it boil).
Melt the cheese:
Reduce the heat to low, and gradually stir in the white American cheese and Monterey Jack cheese, a little at a time, until completely melted and smooth.
Season the queso:
Stir in the cumin, salt, and black pepper. If the queso is too thick, add a little more milk to reach your desired consistency.
Garnish and serve:
Transfer the queso to a serving bowl and garnish with diced tomatoes and chopped fresh cilantro, if desired. Serve immediately with tortilla chips.
