White German Chocolate Cake Recipe

Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large egg whites
1 teaspoon vanilla extract
1 cup milk (whole or 2%)
1 cup shredded sweetened coconut
1 cup chopped pecans
For the Frosting:
1 cup unsalted butter, softened
2 cups powdered sugar
1/2 cup packed brown sugar
1/2 cup evaporated milk
1 cup shredded sweetened coconut
1 cup chopped pecans
1 teaspoon vanilla extract
For Garnish (optional):
Additional shredded coconut
Additional chopped pecans

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Grease and flour three 8-inch round cake pans, or line them with parchment paper.
Prepare the Cake Batter:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg whites one at a time, beating well after each addition.
Mix in the vanilla extract.
Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
Gently fold in the shredded coconut and chopped pecans.
Bake the Cake:
Divide the batter evenly among the prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting:
In a medium saucepan, melt the butter over medium heat.
Stir in the brown sugar and evaporated milk. Bring the mixture to a boil, then reduce the heat and simmer for 2 minutes, stirring constantly.
Remove from heat and let cool slightly.
Stir in the powdered sugar, shredded coconut, chopped pecans, and vanilla extract until well combined.
The frosting will thicken as it cools. If it becomes too thick, you can add a little more evaporated milk to reach the desired consistency.
Assemble and Frost the Cake:
Place one layer of cake on a serving plate or cake stand.
Spread a layer of frosting over the top of the first cake layer.
Place the second cake layer on top and frost as before.
Add the third cake layer and frost the top and sides of the cake.
Garnish and Serve:
Garnish the cake with additional shredded coconut and chopped pecans if desired.
