White Beans and Sausage Bowl
Ingredients:
1 lb (450g) Italian sausage (bulk or casings removed)
1 medium onion, chopped
3 cloves garlic, minced
2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed
1 can (14.5 oz) diced tomatoes, undrained
2 cups chicken broth
1 cup baby spinach (optional)
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp paprika
Salt and pepper to taste
2 tbsp olive oil
Fresh parsley or basil for garnish (optional)
Directions:
Cook Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks. Once cooked through, remove the sausage from the pot and set aside.
Sauté Vegetables: In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Combine Ingredients: Return the cooked sausage to the pot. Stir in the white beans, diced tomatoes (with their juices), and chicken broth. Add oregano, thyme, paprika, salt, and pepper.
Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes to allow the flavors to meld and the beans to heat through.
Add Spinach: If using, stir in the baby spinach during the last 5 minutes of cooking, allowing it to wilt.
Serve: Ladle the mixture into bowls. Garnish with fresh parsley or basil if desired. Serve hot with crusty bread or over rice if preferred.
