Weet Blueberry Biscuits
Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
1 tsp vanilla extract
1 cup fresh or frozen blueberries
2 tbsp melted butter (for brushing)
Glaze:
1 cup powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract
Directions:
Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the Butter:
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs.
Add Wet Ingredients:
Stir in the buttermilk and vanilla extract until just combined. Be careful not to overmix.
Fold in Blueberries:
Gently fold the blueberries into the dough, taking care not to crush them.
Shape the Biscuits:
Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet.
Bake the Biscuits:
Brush the tops of the biscuits with the melted butter. Bake for 15-18 minutes, or until the biscuits are golden brown on top.
Prepare the Glaze:
While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Glaze the Biscuits:
Once the biscuits are out of the oven, let them cool slightly, then drizzle the glaze over the top.
Serve and Enjoy:
Serve the blueberry biscuits warm and enjoy. These are best eaten fresh.
