Ingredients:
1 tbsp olive oil
1 medium onion, diced
3 garlic cloves, minced
2 cans (28 oz each) crushed tomatoes
4 cups chicken or vegetable broth
1 tsp dried basil
1 tsp dried oregano
1/2 tsp sugar
Salt and pepper to taste
1 package (20 oz) refrigerated cheese tortellini
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)

Directions:
Prepare the Base:
Heat the olive oil in a pan over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
Transfer to Slow Cooker:
Transfer the onion and garlic mixture to the slow cooker. Add the crushed tomatoes, chicken or vegetable broth, dried basil, dried oregano, sugar, salt, and pepper. Stir to combine.
