🍠 Vegan Sweet Potato Brownies
Moist, chocolatey brownies made with sweet potato for a healthier vegan treat!

🛒 Ingredients:
1 large sweet potato, peeled and cubed (about 1½ cups mashed)

½ cup almond flour

½ cup unsweetened cocoa powder

½ cup maple syrup

¼ cup melted coconut oil

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

Optional: ¼ cup vegan chocolate chips or chopped nuts

Cook the Sweet Potato
Boil or steam the sweet potato cubes until fork-tender (about 10–12 minutes). Drain and mash until smooth. Let cool slightly.

Preheat Oven
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.

Mix the Batter
In a mixing bowl, combine the mashed sweet potato, maple syrup, melted coconut oil, and vanilla extract. Mix until smooth.
Add almond flour, cocoa powder, baking powder, and salt. Stir until just combined. Fold in chocolate chips or nuts if using.

Bake
Spread the batter evenly into the prepared baking dish.
Bake for 25–30 minutes, or until the edges are set and a toothpick comes out with a few moist crumbs.

Cool & Serve
Let cool completely before slicing (they firm up as they cool). Enjoy chilled or at room temp!
