🌱🍫 Vegan Blueberry Bounty Bars 🍫🌱
Healthier, vegan, and gluten-free take on the classic bounty bars with a blueberry twist.
Ingredients:
1 cup (235ml) light coconut milk
5 tbsp maple syrup
4 tbsp coconut butter or creamed coconut
Pinch of salt
2 cups (110g) desiccated coconut
1 tbsp blueberry powder
200g dark chocolate, melted
Directions:
Combine Ingredients:
Pour coconut milk, coconut butter, maple syrup, and salt into a saucepan.
Heat on low until fully combined.
Mix in Coconut:
Remove from heat.
Fold in desiccated coconut and blueberry powder.
Form Bars:
Press mixture into a loaf tin lined with parchment paper.
Freeze for 2-3 hours.
Slice and Coat:
Slice into 12 bars.
Coat each bar with melted dark chocolate.
Set and Serve:
Freeze again for 30 minutes to set the chocolate.
Enjoy immediately or store in the fridge for up to 3 days.
