1 pound shrimp, peeled and deveined

1 cup orzo pasta

1½ cups chicken or vegetable broth

½ cup heavy cream

1 cup fresh spinach, chopped

1 cup sun-dried tomatoes, chopped

½ teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional, for a little heat)

Sauté Aromatics
Heat olive oil in a large skillet over medium heat. Add garlic and onion, cooking for 2–3 minutes until fragrant and softened. -
Cook the Shrimp
Season shrimp with salt and pepper. Add to the skillet and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside. -
Cook the Orzo
In the same skillet, add orzo and toast lightly for 1–2 minutes. Pour in the chicken or vegetable broth and bring to a simmer. Cook for 8–10 minutes until orzo is tender and most of the liquid is absorbed. -
Add Cream & Flavorings
Stir in heavy cream, sun-dried tomatoes, spinach, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes until spinach wilts and sauce thickens slightly.
