Tilapia with Roasted Red Pepper Cream Sauce

Ingredients:

Tilapia fillets (4, about 6 ounces each)
Salt (to taste)
Black pepper (to taste)
Garlic powder (½ teaspoon)
Olive oil (2 tablespoons)
Butter (1 tablespoon)
Roasted red peppers (1 cup, jarred and drained or homemade)
Garlic (2 cloves, minced)
Heavy cream (½ cup)
Parmesan cheese (¼ cup, grated)
Fresh parsley (for garnish, optional)

Instructions:

1. Season both sides of the tilapia fillets with salt, pepper, and garlic powder.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the tilapia fillets and cook for 3–4 minutes per side, or until golden and cooked through. Remove from the skillet and set aside.
4. In the same skillet, reduce heat to medium and melt the butter.
5. Add the minced garlic and cook for 30 seconds until fragrant.
6. Add the roasted red peppers and sauté for 1–2 minutes.
7. Transfer the mixture to a blender or use an immersion blender to blend until smooth.
8. Return the sauce to the skillet and stir in the heavy cream and Parmesan cheese. Simmer for 2–3 minutes until the sauce thickens slightly.
9. Return the tilapia to the skillet and spoon sauce over the fillets to warm through.
10. Garnish with chopped parsley if desired and serve immediately.
