Tater Tot Sausage Breakfast Casserole
Ingredients:
1 pound breakfast sausage
1 small onion, diced
1 bell pepper, diced (any color)
2 cups shredded cheddar cheese
1 cup milk
6 large eggs
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
32 ounces frozen tater tots
Optional: Fresh chopped parsley for garnish
Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook Sausage:
In a large skillet over medium heat, cook the breakfast sausage, breaking it into crumbles, until browned and fully cooked. Drain any excess fat.
Add Vegetables:
Add the diced onion and bell pepper to the skillet with the sausage. Cook until the vegetables are softened, about 5 minutes. Remove from heat and set aside.
Prepare Egg Mixture:
In a large bowl, whisk together the eggs, milk, dried thyme, garlic powder, onion powder, salt, and pepper.
Assemble Casserole:
Spread the cooked sausage and vegetable mixture evenly in the bottom of the prepared baking dish. Sprinkle the shredded cheddar cheese over the top.
Arrange the frozen tater tots in a single layer over the cheese.
Pour Egg Mixture:
Carefully pour the egg mixture over the tater tots, ensuring it is evenly distributed.
Bake:
Bake in the preheated oven for 35-40 minutes, or until the tater tots are crispy and the eggs are set. You can test this by inserting a knife into the center of the casserole; it should come out clean.
Serve:
Let the casserole cool for a few minutes before cutting into squares. Garnish with fresh chopped parsley if desired.
