Tater Tot Breakfast Casserole

Ingredients:
1 lb breakfast sausage (pork, turkey, or your preference)
1 bag (32 oz) frozen tater tots
8 large eggs
1 ½ cups milk (whole or 2%)
2 cups shredded cheddar cheese (divided)
1 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
½ teaspoon salt
½ cup green onions, chopped (optional for garnish)

Instructions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
Step 2: Cook the Sausage
In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spatula until browned and cooked through. Drain the excess fat and set aside.
Step 3: Prepare the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.
Step 4: Assemble the Casserole
Spread the cooked sausage evenly across the bottom of the greased baking dish.
Sprinkle 1 cup of shredded cheddar cheese and 1 cup of shredded mozzarella cheese over the sausage.
Pour the egg mixture over the sausage and cheese layer.
Arrange the frozen tater tots in a single layer on top of the egg mixture.
Step 5: Add More Cheese
Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the tater tots.
Step 6: Bake the Casserole
Bake the casserole in the preheated oven for 40-45 minutes, or until the eggs are set and the tater tots are golden and crispy on top.
Step 7: Garnish and Serve
Remove the casserole from the oven and let it cool for about 5 minutes.
Garnish with chopped green onions (optional), then slice and serve.
