Tangerine Pudding (Budín de Mandarina)
Ingredients:
2 tangerines (whole, unpeeled)
3 large eggs
1 ½ cups (300g) sugar
½ cup (120ml) vegetable oil
2 cups (250g) all-purpose flour
1 tablespoon baking powder
A pinch of salt
Powdered sugar (optional, for dusting)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
2. Wash the tangerines thoroughly. Cut them into quarters, remove any seeds, and blend them (with peel) until smooth.
3. In a large bowl, beat the eggs and sugar until light and fluffy.
4. Gradually add the oil, mixing well.
5. Stir in the blended tangerine pulp.
6. Sift together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
7. Pour the batter into the prepared loaf pan.
8. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
9. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
10. Dust with powdered sugar before serving, if desired.
