Ingredients
For the Potatoes

4 medium yellow potatoes (or russets)

Olive oil

Salt
For the Taco Filling

1 pound ground beef

1 packet taco seasoning (or homemade)

½ cup water
Toppings

1 cup shredded cheddar or Mexican-blend cheese

Sour cream

Chopped green onions

Optional: diced tomatoes, jalapeños, salsa
Directions

Preheat oven to 400°F (200°C). Scrub potatoes clean, rub with olive oil, and sprinkle with salt.

Place potatoes directly on the oven rack or a baking sheet and bake for 45–55 minutes, until fork-tender and crispy outside.

While potatoes bake, brown ground beef in a skillet over medium heat until fully cooked; drain excess grease.

Stir taco seasoning and water into the beef and simmer for 5 minutes until thickened.

Remove baked potatoes from oven and slice open lengthwise, fluffing the insides with a fork.

Spoon taco beef into each potato and top with shredded cheese.
