Ingredients

  • 12 oz spaghetti

  • 1 lb ground beef

  • 1 packet taco seasoning (or 2 tbsp homemade blend)

  • 1 can Rotel tomatoes (diced tomatoes with green chilies, undrained)

  • 2 cups beef broth

  • 1 cup tomato sauce

  • 1 tbsp olive oil (optional)

  • 1 cup shredded cheddar cheese (optional but recommended 😏)

  • Salt & black pepper, to taste

Optional Toppings:
Chopped cilantro, green onions, sour cream, jalapeños, extra cheese


Directions

  1. Cook the Beef
    Heat a large deep skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.

  2. Season
    Stir in taco seasoning and cook for 1 minute to bloom the spices.

  3. Build the Sauce
    Add Rotel tomatoes, beef broth, and tomato sauce. Stir to combine.

  4. Add Spaghetti
    Break spaghetti in half and submerge it into the sauce. Bring to a gentle boil.

  5. Simmer
    Reduce heat to medium-low, cover, and simmer 12–15 minutes, stirring occasionally, until pasta is tender and sauce thickens.

  6. Cheesy Finish (Optional)
    Stir in shredded cheese until melted and creamy.
