Taco Meatloaf

Ingredients:
1 lb ground beef
1 lb ground pork (or ground turkey)
1 packet taco seasoning mix
1/2 cup crushed tortilla chips (or breadcrumbs)
1/2 cup shredded cheddar cheese
1/4 cup salsa
1 egg, lightly beaten
1/4 cup chopped onions
1/4 cup chopped green bell pepper
1/4 cup sour cream (optional, for topping)
1/4 cup additional shredded cheddar cheese (optional, for topping)
Fresh cilantro (optional, for garnish)

Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, ground pork (or turkey), taco seasoning mix, crushed tortilla chips, 1/2 cup shredded cheddar cheese, salsa, egg, chopped onions, and chopped green bell pepper. Mix thoroughly until well combined.
Form the Meatloaf:
Transfer the mixture into the prepared loaf pan and shape it into a loaf.
Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until fully cooked and an internal temperature of 160°F (70°C) is reached.
Add Cheese Topping (Optional):
If using, sprinkle additional shredded cheddar cheese on top of the meatloaf during the last 5-10 minutes of baking, allowing it to melt and turn golden.
Cool and Serve:
Remove the meatloaf from the oven and allow it to cool for a few minutes before slicing.
Garnish:
Serve with a dollop of sour cream on top and garnish with fresh cilantro for added flavor.

Serve the taco meatloaf with a side of Mexican rice, refried beans, or a fresh salad.
