Taco Cupcakes

Ingredients:
1 lb ground beef or ground turkey
1 packet taco seasoning (or homemade blend)
12 wonton wrappers
1 cup shredded cheddar cheese (or Mexican blend)
1 cup refried beans
1/2 cup salsa
1/4 cup sour cream (optional)
1/4 cup guacamole (optional)
1 tbsp olive oil
1/4 cup diced tomatoes (for topping)
1/4 cup shredded lettuce (for topping)
1/4 cup chopped cilantro (for garnish)

Directions:
Preheat and Prepare:
Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with olive oil or cooking spray.
Cook the Meat:
In a medium skillet, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks. Drain any excess grease, then stir in the taco seasoning and 1/4 cup of water. Let it simmer for 5 minutes until the meat is coated in seasoning and most of the liquid has evaporated. Set aside.
Layer the Wonton Wrappers:
Place a wonton wrapper into each muffin cup, pressing it down to form a little “cup.” Add about 1 tablespoon of refried beans to the bottom of each wonton cup. Then, add a layer of taco meat (about 1 tablespoon).
Cheese and Second Wonton Layer:
Sprinkle a bit of shredded cheese over the taco meat, then add a second wonton wrapper on top of the cheese. Press down gently to layer it. Add another layer of taco meat, a spoonful of salsa, and finish with more cheese on top.
Bake the Taco Cupcakes:
Bake the taco cupcakes in the preheated oven for 12-15 minutes, or until the wonton wrappers are golden brown and crispy, and the cheese is melted.
Garnish and Serve:
Remove the taco cupcakes from the oven and allow them to cool for a couple of minutes. Add toppings such as diced tomatoes, shredded lettuce, sour cream, guacamole, and a sprinkle of cilantro before serving.
