Ingredients
-
1 lb ground beef
-
1 packet (1 oz) taco seasoning
-
½ cup water
-
1 cup refried beans (canned or homemade)
-
6 large flour tortillas
-
1 cup shredded cheddar cheese
-
1 cup shredded mozzarella or Mexican blend cheese
-
½ cup red enchilada sauce (plus more for drizzling)
-
Optional toppings: diced tomatoes, green onions, sliced olives, sour cream, shredded lettuce
Directions
1️⃣ Cook the Beef
In a skillet over medium heat, cook ground beef until fully browned. Drain excess grease.
Add taco seasoning and water, stir well, and simmer 3–5 minutes until thickened. Set aside.
2️⃣ Crisp the Tortillas
Preheat oven to 400°F (200°C).
Place tortillas on baking sheets and bake 5–6 minutes, flipping once, until lightly golden and crisp.
3️⃣ Assemble the Mexican Pizza
-
Spread refried beans on one crispy tortilla.
-
Add a layer of seasoned beef, then a generous sprinkle of cheese.
-
Drizzle with a bit of enchilada sauce.
-
Top with a second crispy tortilla. Repeat layers for additional “pizzas.”
4️⃣ Bake
Place assembled Mexican pizzas in the oven for 8–10 minutes, until cheese is melted and bubbling.
5️⃣ Serve
Cut into wedges and top with optional toppings like lettuce, tomatoes, green onions, or sour cream. Serve immediately.
