Sweet Potato Pineapple Upside Donut Rings
Ingredients:

1 cup mashed sweet potatoes
1 cup crushed pineapple, drained
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt

Instructions:
1. Preheat your oven to 350°F (175°C) and grease a donut pan.
2. In a large bowl, mix mashed sweet potatoes, crushed pineapple, brown sugar, granulated sugar, oil, eggs, and vanilla until well blended.
3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
4. Gradually stir the dry ingredients into the wet mixture until just combined—do not overmix.
5. Spoon the batter into the donut pan, filling each mold about two-thirds full.
6. Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
7. Let the donuts cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
8. Serve warm or at room temperature and enjoy the nostalgic, comforting flavors.
