Sweet Potato Brownies
Ingredients:
1 cup cooked and mashed sweet potato (about 1 large or 2 medium sweet potatoes)
1/2 cup almond butter (or any nut/seed butter)
1/3 cup maple syrup (or honey)
1/4 cup cocoa powder
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
Optional add-ins: 1/4 cup chocolate chips, chopped nuts, or dried fruit
Instructions:
Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
Prepare the sweet potatoes: Pierce the sweet potatoes with a fork and bake at 400°F (200°C) for 45-60 minutes, or until soft. Alternatively, you can microwave them for 6-8 minutes, turning halfway through.
Mash the sweet potatoes: Once cooked and cooled, scoop out the flesh and mash it until smooth.
Mix the batter: In a large bowl, combine the mashed sweet potato, almond butter, maple syrup, cocoa powder, vanilla extract, baking soda, and salt. Stir until well mixed. Fold in any optional add-ins like chocolate chips.
Pour the batter into the pan: Spread the mixture evenly in the prepared baking pan.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a little moist is fine).
Cool and serve: Let the brownies cool in the pan before slicing.
