Sweet Hawaiian Crockpot Chicken
Ingredients:
4 boneless, skinless chicken breasts (about 1.5 pounds)
1 cup pineapple chunks (fresh or canned, with juice)
1/2 cup soy sauce
1/4 cup honey
1/4 cup brown sugar
1 tablespoon cornstarch
1 tablespoon water
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
1/4 cup sliced green onions (for garnish)
1 tablespoon sesame seeds (for garnish)
Cooked rice, for serving
Directions:
Prepare the Chicken:
Place the chicken breasts in the bottom of the crockpot.
Make the Sauce:
In a medium bowl, mix together the pineapple chunks (including the juice), soy sauce, honey, brown sugar, garlic powder, onion powder, ground ginger, and crushed red pepper flakes (if using). Stir until well combined.
Add the Sauce:
Pour the sauce mixture over the chicken breasts in the crockpot.
Cook:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Thicken the Sauce:
About 30 minutes before the chicken is done, mix the cornstarch and water in a small bowl to make a slurry. Stir the slurry into the crockpot and cook on high for an additional 30 minutes to thicken the sauce.
Shred the Chicken:
Once the chicken is cooked and tender, remove it from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and mix it with the sauce.
Serve:
Serve the sweet Hawaiian chicken over cooked rice. Garnish with sliced green onions and sesame seeds.
