Sweet Hawaiian Crockpot Chicken

Ingredients:
4 boneless, skinless chicken breasts
1/2 cup pineapple juice
1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup ketchup
1/4 cup apple cider vinegar
1 tablespoon garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
1 cup pineapple chunks (fresh or canned)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1/4 cup chopped green onions (for garnish)
Cooked rice (for serving)

Directions:
Prepare the Sauce:
In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, ground ginger, and black pepper until well combined.
Layer the Crockpot:
Place the chicken breasts in the bottom of your crockpot.
Add the pineapple chunks, sliced bell peppers, and onion on top of the chicken.
Add the Sauce:
Pour the prepared sauce over the chicken and vegetables, making sure everything is evenly coated.
Cook:
Cover the crockpot with the lid and cook on Low for 6-7 hours or on High for 3-4 hours, until the chicken is fully cooked and tender.
If you prefer a thicker sauce, you can remove the lid during the last 30 minutes of cooking to allow the sauce to reduce slightly.
Serve:
Once cooked, remove the chicken from the crockpot and shred or slice it as desired.
Serve the chicken and vegetables over a bed of cooked rice.
Spoon the remaining sauce from the crockpot over the chicken and rice for extra flavor.
Garnish:
Garnish with chopped green onions before serving.
Storage:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop before serving.
