Ingredients
For the Sauce:

1 cup fresh pineapple, finely chopped

½ cup water

½ cup rice vinegar or apple cider vinegar

¼ cup honey or brown sugar (adjust to taste)

1–2 tablespoons chili flakes or fresh red chili, finely chopped (adjust heat level)

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon soy sauce

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Directions
1. Prepare the Pineapple

Peel and finely chop the fresh pineapple. You can also use canned pineapple (drained) in a pinch, but fresh gives a brighter flavor.

Set aside while preparing the other ingredients.
2. Cook the Sauce

In a medium saucepan over medium heat, combine the pineapple, water, vinegar, honey (or brown sugar), chili flakes, garlic, and ginger.

Stir well to combine and bring the mixture to a gentle simmer.

Let it cook for 8–10 minutes, stirring occasionally, until the pineapple softens and the flavors meld.

Add soy sauce and stir. Taste and adjust sweetness or heat as needed.
3. Thicken (Optional)

If you prefer a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon water to create a slurry.

Slowly pour the slurry into the simmering sauce while stirring constantly.

Cook for another 2–3 minutes until the sauce reaches your desired thickness.
