📝 Ingredients
-
1 cup granulated sugar
-
1 cup brown sugar
-
1 cup vegetable oil
-
4 large eggs
-
2 cups pecans, finely chopped
-
1 cup all-purpose flour
-
1 cup self-rising flour
-
1 teaspoon vanilla extract
🍽️ Directions
1️⃣ Preheat & Prep
Preheat oven to 325°F (165°C).
Grease two 9×5-inch loaf pans or line with parchment paper.
2️⃣ Mix the Wet Ingredients
In a large bowl, whisk together granulated sugar, brown sugar, and vegetable oil until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract.
3️⃣ Add Dry Ingredients
Gently fold in all-purpose flour and self-rising flour just until combined.
Do not overmix — this keeps the bread tender.
4️⃣ Fold in Pecans
Stir in chopped pecans evenly throughout the batter.
5️⃣ Bake
Divide batter evenly between prepared loaf pans.
Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
6️⃣ Cool & Serve
Let loaves cool in pans for 15 minutes, then transfer to a wire rack to cool completely.
Slice and enjoy!
