Super Easy Parmesan Crusted Zucchini

Ingredients:
4 medium zucchinis, sliced into rounds
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs (optional for extra crunch)
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper (to taste)
2 tbsp olive oil
Fresh parsley (chopped, for garnish)

Directions:
Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Zucchini: Slice the zucchinis into 1/4-inch rounds and place them in a large bowl. Drizzle with olive oil and toss to coat evenly.
Mix the Parmesan Crust: In a small bowl, combine the grated Parmesan cheese, breadcrumbs (if using), garlic powder, Italian seasoning, salt, and pepper.
Coat the Zucchini: Dip each zucchini slice into the Parmesan mixture, pressing lightly to ensure the coating sticks. Arrange the coated zucchini rounds on the prepared baking sheet.
Bake: Bake for 15-20 minutes or until the zucchini is golden brown and crispy.
Garnish and Serve: Remove from the oven and sprinkle with freshly chopped parsley. Serve immediately as a side dish or snack.
