Stuffed Potato Cakes

Ingredients:
Potato Dough:
4 large potatoes, peeled and quartered
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese (optional, for extra flavor)
1 egg
Salt and pepper, to taste
Filling Options:
1 cup shredded mozzarella or cheddar cheese
1/4 cup chopped green onions or fresh herbs (such as parsley or chives)

For Cooking:
2-3 tablespoons oil, for frying

Instructions:
Prepare the Potatoes:
Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Let them cool slightly.
Make the Potato Dough:
In a large bowl, combine the mashed potatoes with flour, Parmesan (if using), egg, salt, and pepper. Mix until it forms a dough-like consistency. If it’s sticky, add a little more flour.
Prepare the Filling:
In a separate bowl, mix the cheese with green onions or herbs. Season with salt and pepper.
Form the Potato Cakes:
Take a handful of the potato dough (about 2 tablespoons) and flatten it into a small disc.
Place a spoonful of the filling in the center and fold the dough over, sealing the edges to encase the filling. Shape it into a small patty or cake. Repeat with the remaining dough and filling.
Cook the Potato Cakes:
Heat a few tablespoons of oil in a skillet over medium heat. Place the stuffed potato cakes in the pan and cook for 3-4 minutes per side, or until golden brown and crispy.
Serve:
Serve warm, garnished with fresh herbs or a dollop of sour cream.
