Stuffed Doritos Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/2 cup green onions, chopped
1 large bag of Nacho Cheese Doritos, crushed
1/2 cup mayonnaise (or substitute with sour cream)
Salt and pepper, to taste
Toothpicks, for sealing
Directions:
Prepare Chicken Breasts: Preheat oven to 375°F (190°C). Use a sharp knife to cut a pocket into each chicken breast, being careful not to slice all the way through.
Make the Filling: In a mixing bowl, combine the cream cheese, shredded cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.
Stuff the Chicken: Fill each chicken breast with the cheese mixture. Use toothpicks to secure the open edges to keep the filling inside during cooking.
Coat the Chicken: Spread a thin layer of mayonnaise on the outside of each chicken breast to help the coating stick. Place the crushed Doritos in a shallow dish and press each chicken breast into the Doritos until fully coated.
Bake the Chicken: Arrange the coated chicken breasts on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is cooked through and the Doritos coating is golden and crispy.
Serve: Remove the toothpicks and let rest for a few minutes before serving.
