For the Filling:

  • 1/3 cup granulated sugar

  • 1/2 cup heavy cream, whipped

For the Crepes:

  • 1 cup all-purpose flour

  • 1 1/4 cups milk

  • 2 large eggs

  • 2 tablespoons sugar

  • 1/4 teaspoon salt

  • 2 tablespoons melted butter

  • 1 teaspoon vanilla extract

Topping & Garnish:

  • 1 cup fresh strawberries, sliced

  • 1/2 cup crushed shortbread cookies or golden cookie crumbs

🍳 Instructions

1️⃣ Prepare the Cheesecake Filling

In a medium bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, and mix until creamy.
Gently fold in the whipped cream until fully incorporated, creating a light and fluffy cheesecake filling. Cover and refrigerate while preparing the crepes.
