This gorgeous layered dessert brings together a soft vanilla cake, creamy no-bake cheesecake, and a luscious strawberry topping—perfect for birthdays, gatherings, or just treating yourself!

Ingredients
For the Vanilla Cake Layer:
1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

ÂĽ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup whole milk

For the Cheesecake Layer:
16 oz cream cheese (2 packages), softened

Âľ cup powdered sugar

1 teaspoon vanilla extract

½ cup cold heavy whipping cream

For the Strawberry Topping:
1 ½ cups fresh strawberries, hulled and sliced

ÂĽ cup granulated sugar

1 tablespoon cornstarch + 2 tablespoons water (mixed into a slurry)

Instructions
1. Prep the Pan & Oven
Line an 8-inch springform pan with parchment paper.

Preheat oven to 350°F (175°C).

2. Make the Vanilla Cake
In a bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream butter and sugar until fluffy.

Add eggs one at a time, beating well after each. Stir in vanilla.

Alternate adding the dry ingredients and milk, beginning and ending with dry.

Pour batter into the prepared pan and bake 20–25 minutes, or until a toothpick comes out clean.

Cool completely in the pan.

3. Make the Cheesecake Layer
Beat softened cream cheese and powdered sugar until smooth.

Add vanilla, then slowly add in the whipping cream.

Beat on medium-high until light, smooth, and fluffy.

4. Assemble the Cake
Spread cheesecake mixture over the cooled vanilla cake in the pan.

Refrigerate while making the topping.

5. Make the Strawberry Topping
In a small saucepan, combine strawberries and sugar.

Stir in the cornstarch slurry.

Cook over medium heat for 5–7 minutes, until thickened and glossy.

Let cool slightly, then gently spoon over the cheesecake layer.

6. Chill & Serve
Chill the full cake for at least 2 hours (overnight is best!).

Slice and serve chilled. Optional: garnish with whipped cream or extra fresh strawberries.
