🍰 For the Shortcake:
1 ½ cups all-purpose flour
½ cup granulated sugar
2 tsp baking powder
½ tsp salt
¼ cup cold butter, cut into pieces
½ cup milk
1 egg
🍓 For the Strawberries:
3 cups fresh strawberries, hulled and sliced
¼ cup sugar (adjust to taste)
🍦 For the Cream:
1 cup heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract
🧁 Instructions:
Prep the strawberries: In a bowl, mix sliced strawberries with sugar and let sit for at least 30 minutes to macerate and release juices.
Make the shortcake:
Preheat oven to 425°F (220°C).
In a large bowl, mix flour, sugar, baking powder, and salt.
Cut in the cold butter until crumbly.
In a small bowl, whisk milk and egg together, then stir into the dry ingredients until just combined.
Drop spoonfuls onto a greased baking sheet or shape into rounds.
Bake 12–15 minutes or until golden brown.
Whip the cream: Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
Assemble:
Slice shortcakes in half.
Layer with strawberries and whipped cream.
