Ingredients

2 sheets frozen puff pastry, thawed

1 large egg + 1 tbsp water (for egg wash)

2 tbsp granulated sugar
Strawberry Filling

2 cups fresh strawberries, diced

¼ cup granulated sugar

1 tbsp cornstarch

1 tsp lemon juice
-
½ tsp vanilla extract

Vanilla glaze or drizzle of icing
Directions
1️⃣ Prep the Filling
In a bowl, mix strawberries, sugar, cornstarch, lemon juice, and vanilla. Set aside while you prep the pastry.
2️⃣ Prepare the Puff Pastry
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Unfold puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal rectangles (8 total).
3️⃣ Fill & Shape
Spoon strawberry mixture onto the center of half the pastry rectangles, leaving a border.
Top with remaining rectangles and press edges with a fork to seal.
4️⃣ Egg Wash & Sugar
Whisk egg and water. Brush over tops of pastries.
Sprinkle lightly with granulated sugar for sparkle and crunch.
5️⃣ Bake
Bake for 18–22 minutes, until puffed, flaky, and deep golden brown.
6️⃣ Finish & Serve
Cool slightly, then dust with powdered sugar or drizzle with glaze if desired. Serve warm or at room temperature.
