🕒 Time & Yield

  • Prep Time: 15 minutes

  • Bake Time: 45–50 minutes

  • Total Time: ~1 hour

  • Servings: 12–15

🧁 Ingredients

🍰 Cake Base

  • 1 box strawberry cake mix

  • Ingredients listed on the box (usually eggs, oil, and water)

  • 1½ cups fresh or frozen strawberries, chopped

🧀 Cream Cheese Swirl

  • 8 oz cream cheese, softened

  • ½ cup unsalted butter, melted

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

🍓 Add-Ins

  • 1 cup shredded sweetened coconut

  • 1 cup white chocolate chips (or strawberry baking chips)

👩‍🍳 Instructions

1️⃣ Prep

  • Preheat oven to 350°F (175°C).

  • Grease a 9×13-inch baking dish.

2️⃣ Make the Cake Batter

  • Prepare the strawberry cake mix according to package directions.

  • Gently fold in the chopped strawberries.

3️⃣ Assemble the Base

  • Pour batter into the prepared baking dish.

  • Sprinkle coconut evenly over the batter.

  • Sprinkle white chocolate chips on top.

4️⃣ Make the Cream Cheese Mixture

  • In a bowl, beat cream cheese until smooth.

  • Add melted butter, powdered sugar, and vanilla extract.

  • Mix until creamy and pourable.

5️⃣ Create the “Earthquake”

  • Spoon the cream cheese mixture randomly over the cake batter.

  • Do not swirl — the cracking and sinking happens naturally while baking.

6️⃣ Bake

  • Bake uncovered for 45–50 minutes, until the edges are set but the center is slightly gooey.

  • The top will crack and ripple — that’s the signature earthquake look!

7️⃣ Cool & Serve

  • Let cool at least 30 minutes before slicing.

  • Serve warm or chilled — both are amazing.
