Strawberry Banana Cheesecake Salad

Strawberry Banana Cheesecake Salad

Ingredients:
1 package (8 oz) cream cheese, softened
1 package (3.4 oz) instant cheesecake pudding mix
1 ½ cups milk
1 cup heavy whipping cream
2 tablespoons powdered sugar
3 cups fresh strawberries, hulled and sliced
3 large bananas, sliced
1 teaspoon vanilla extract
Optional: graham cracker crumbs for garnish

Directions:
Make the Cheesecake Mixture:
In a medium bowl, beat the softened cream cheese until smooth and creamy.
Add the instant cheesecake pudding mix and milk to the cream cheese. Whisk together until combined and smooth.
Let the mixture sit for 5 minutes to thicken.
Whip the Cream:
In a separate bowl, whip the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
Gently fold the whipped cream into the cheesecake mixture until well combined.
Prepare the Fruit:
Hull and slice the strawberries, and slice the bananas right before adding to avoid browning.
Assemble the Salad:
Gently fold the strawberries and bananas into the cheesecake mixture until well incorporated.
If desired, sprinkle graham cracker crumbs on top for a “cheesecake crust” effect.
Chill and Serve:
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Serve cold as a refreshing, creamy fruit salad.
