Quick, satisfying, and loaded with melty cheese and tender steak – these quesadillas are perfect for weeknight dinners, game-day snacks, or casual meals that everyone will love. The combination of seasoned steak, grilled onions, and gooey cheese tucked inside a crispy tortilla creates the ultimate handheld comfort food.


🛒 Ingredients

For the Steak:

  • 1 pound skirt steak, diced into 1-inch pieces

  • 1 tablespoon vegetable oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the Quesadillas:

  • 4 large flour tortillas

  • 1 ½ cups shredded cheddar or Monterey Jack cheese (or a blend)

  • 1 small onion, thinly sliced

  • 1 small bell pepper, thinly sliced (optional for color and sweetness)

  • 1 tablespoon butter or oil (for skillet)

Optional Toppings & Sides:

  • Sour cream

  • Guacamole or sliced avocado

  • Salsa or pico de gallo

  • Jalapeños or hot sauce


🍳 Instructions

1️⃣ Marinate the Steak

In a bowl, toss the diced steak with vegetable oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Let it marinate for 10–15 minutes at room temperature to enhance flavor. For extra tenderness, you can also marinate for up to 1 hour in the fridge.


2️⃣ Cook the Steak & Veggies

Heat a large skillet over medium-high heat. Add the marinated steak and sear for 2–3 minutes per side until browned but still juicy. Remove steak from skillet and set aside.

In the same skillet, sauté onions (and bell peppers, if using) with a little oil or butter until softened and slightly caramelized, about 5 minutes. This adds sweetness and depth to your quesadillas.


3️⃣ Assemble the Quesadillas

Lay a tortilla flat and sprinkle a layer of shredded cheese over half of it. Add cooked steak, sautéed onions, and more cheese on top. Fold the tortilla over to cover the filling.

Repeat with remaining tortillas and ingredients.


4️⃣ Cook the Quesadillas

Heat a skillet over medium heat and add a little butter or oil. Place one folded quesadilla in the skillet and cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted.

Transfer to a plate and let rest for 1–2 minutes before slicing into wedges. This keeps the cheese from spilling out.


5️⃣ Serve & Garnish

Serve warm with sour cream, guacamole, salsa, or pico de gallo. Add jalapeños for a spicy kick if desired.
