Squash Patties

Ingredients:
2 cups grated yellow squash (about 2-3 medium-sized squash)
1/2 small onion, finely chopped
1/2 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon baking powder
1 large egg, beaten
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper
2 tablespoons chopped fresh herbs (optional, such as parsley or chives)
Oil for frying (vegetable or olive oil)

Directions:
Prepare the Squash:
Grate the yellow squash using a box grater or a food processor.
Place the grated squash in a colander and sprinkle with a little salt.
Let it sit for about 10 minutes to draw out excess moisture.
After 10 minutes, use your hands or a clean kitchen towel to squeeze out as much liquid as possible from the squash.
Mix the Batter:
In a large mixing bowl, combine the grated squash, chopped onion, flour, cornmeal, baking powder, beaten egg, Parmesan cheese, garlic powder, salt, black pepper, and chopped herbs (if using).
Stir the mixture until well combined. The batter should be thick enough to hold together when shaped into patties.
Shape the Patties:
Use your hands to shape the squash mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.
Place the formed patties on a plate or a tray.
Fry the Patties:
Heat a few tablespoons of oil in a large skillet over medium heat.
Once the oil is hot, add the squash patties to the skillet, being careful not to overcrowd the pan.
Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Serve:
Serve the squash patties warm as a side dish, appetizer, or snack.
They pair well with a dipping sauce like ranch, sour cream, or a spicy aioli.
Storage:
Store leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven to restore crispiness.
