Spinach Ricotta Pasta Bake

Ingredients:
12 oz pasta (penne, rigatoni, or your choice)
1 cup ricotta cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 large egg
2 cups fresh spinach, roughly chopped
2 cups marinara sauce
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper to taste
Fresh basil or parsley (optional, for garnish)

Instructions:
Cook the Pasta:
Preheat your oven to 375°F (190°C).
Cook the pasta according to the package directions until al dente. Drain and set aside.
Prepare the Ricotta Mixture:
In a large bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, and egg. Mix until smooth.
Stir in the chopped spinach, Italian seasoning, garlic powder, salt, and pepper. Mix well.
Assemble the Bake:
In a baking dish (9×13-inch works well), spread a thin layer of marinara sauce on the bottom.
Add the cooked pasta and ricotta mixture, stirring until well combined.
Pour the remaining marinara sauce over the pasta mixture and stir lightly to coat.
Top with Cheese:
Sprinkle the remaining mozzarella cheese over the top.
Bake:
Cover the baking dish with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese on top is bubbly and golden.
Garnish and Serve:
Remove from the oven and garnish with fresh basil or parsley if desired.
Serve warm.
