Spice Up Your Bowl with Mexican Tomato Soup! 🍅🔥
Ingredients:
1 lb ground beef or turkey
1 packet taco seasoning mix
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
4 cups chicken or beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or frozen)
Salt and pepper to taste
Optional toppings: sour cream, sliced avocado, chopped cilantro, tortilla strips
Directions:
Cook the Meat:
In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 3 minutes.
Add the ground beef or turkey to the pot, breaking it apart as it cooks. Once browned, drain any excess fat.
Add Seasoning:
Stir in the taco seasoning mix, ensuring the meat is well-coated. Cook for an additional 2 minutes to allow the flavors to blend.
Create the Soup Base:
Add the diced tomatoes, tomato sauce, and chicken or beef broth to the pot. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes.
Creamy Perfection:
Slowly stir in the heavy cream, making the soup rich and creamy. Add the shredded cheddar cheese, stirring until fully melted and incorporated.
Add Beans and Corn:
Add the black beans and corn to the soup, stirring to combine. Simmer for an additional 5 minutes, allowing everything to heat through.
Season and Serve:
Taste and adjust the seasoning with salt and pepper as needed.
Ladle the soup into bowls and top with your choice of sour cream, sliced avocado, chopped cilantro, or tortilla strips for an extra kick.
