Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce 🍅🧄

Ingredients

12 oz spaghetti

2 Tbsp olive oil

3 cloves garlic, minced

½ tsp red pepper flakes (optional, for a little heat)

1 cup sun-dried tomatoes, chopped (oil-packed preferred)

2 cups fresh spinach

1 cup heavy cream
-
½ cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh basil or parsley, for garnish
Directions

Cook the Spaghetti
Boil spaghetti in salted water according to package instructions until al dente. Drain, reserving ½ cup pasta water, and set aside. -
Sauté Garlic and Tomatoes
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook 1–2 minutes. -
Add Spinach and Cream
Reduce heat to medium-low. Add spinach and cook until wilted. Pour in heavy cream, stirring to combine. Simmer 2–3 minutes until slightly thickened. -
Combine Pasta and Sauce
Add cooked spaghetti to the skillet, tossing to coat evenly. If needed, add reserved pasta water 1–2 tablespoons at a time to loosen the sauce. Stir in Parmesan cheese and season with salt and pepper. -
Serve
Plate pasta and garnish with fresh basil or parsley. Serve immediately with extra Parmesan if desired.
