Southern Squash Casserole

Ingredients:
4 cups yellow squash, sliced
1 cup chopped onion
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 large egg
1 cup crushed buttery crackers (like Ritz)
2 tbsp unsalted butter, melted
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika (optional)
1/4 cup chopped fresh parsley (for garnish, optional)

Directions:
Prepare Squash:
Preheat your oven to 350°F (175°C).
In a large pot, bring water to a boil. Add the sliced squash and chopped onion. Cook for about 5-7 minutes until tender. Drain and set aside.
Prepare Casserole Mixture:
In a large mixing bowl, combine the shredded cheddar cheese, grated Parmesan cheese, mayonnaise, sour cream, and egg. Mix until well combined.
Add Squash to Mixture:
Gently fold the cooked squash and onion into the cheese mixture until well coated.
Prepare Topping:
In a small bowl, mix together the crushed crackers, melted butter, garlic powder, onion powder, salt, pepper, and paprika (if using).
Assemble Casserole:
Transfer the squash mixture to a greased 9×13-inch baking dish or a similar size casserole dish.
Evenly sprinkle the cracker topping over the squash mixture.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.
Garnish and Serve:
Allow the casserole to cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.
